SITS Recipe

For all you SITSa's out there, you know why I'm doing this!

First of all, thanks to everyone who stopped by my blog today via SITS. At last check (about 15 minutes ago), I had 371 HITS ON MY BLOG!!!

Whoo Hoo! I feel the lovin'. Too bad none of you are Christian Bale. Then I'd literally want/need to FEEL the lovin'!

Anyway, here's a recipe for Asparagus in Curry Sauce. It's not as yucky as it sounds. The curry sauce is actually good for asparagus, brussel sprouts, broccoli. Heck, I pour it over fish, chicken, turkey, rice, etc...! I love this sauce.

Anyhoo, here's the recipe.

Asparagus in Curry Sauce

Ingredients:

Asparagus (one bunch)
1/3 cup of plain non-fat yogurt
2 tbsp of low-fat mayo
2 tsp of lemon juice (fresh is best)
1/4 tsp of salt
1/4 tsp of curry powder

Bring water to a boil. Add asparagus and bring back to a boil. Boil for 3 minutes.

While the asparagus is boiling, mix all of the remaining ingredients together in a bowl. I use a whisk. It's smoother that way.

Once it's all mixed together, cover it with Saran Wrap or that lovely invention, Press N Seal and heat in the microwave for at least 30 seconds. Don't overheat or the ingredients will separate.

Once the asparagus is done (I like mine crisp), you can pour the sauce over the asparagus. Or, if you're like my household, just pour it over the portion you put on your plate.

I actually got this recipe from an American Heart Association cookbook I got for free off the Internet.

We use this sauce so much that you should see the food stains on the cookbook that's permanently turned to this page!

That sounds good, but man, I don't recommend microwaving plastic wrap of any kind. Unless you want to risk drifting off to crazy-acid-trip land. On second thought, that doesn't sound like such a bad Saturday night.
